I am going to give you, for free, a healthful chocolate fudge recipe. If you are reasonably adept in the kitchen, making it should only take you about 5 minutes to pull together the ingredients and get this delicious dish in the refrigerator. The fudge contains healthful sources of fat and almost no sugar or artificial sweetener.
This recipe was created by nutritionist Geary. He calls it: chocolate-peanut butter-fudge. Just the name might cause you to salivate. If you have a peanut allergy don't worry you can substitute some other ingredients.
Start with getting all the ingredients on the countertop. First, a 3 to 4 ounce extra dark chocolate bar where the cocoa content is at least 70%. The higher the % the less sugar is in the bar. Take 4 to 5 Tbsp of a tasty organic nut butter. I have found many flavors work well. Try peanut butter, almond butter or cashew butter for example
Find and pour 2/3 to 3/4 of a cup of organic coconut milk. This milk is a great source of healthy saturated fats. Add 3 Tbsp of rice bran and 2 Tbsp of oat bran, which provides healthy fiber. Now mix in 1/2 cup of raw pecans, almonds, or walnuts and 1 tsp of vanilla extract. Ok, let's locate the last ingredients of this masterpiece and add 1/2 cup of dried cranberries or raisins and a little stevia to slightly sweeten our fudge. Stevia is natural, non-caloric sweetener and does not contain artificial sweeteners.
You are ready for a prime time cooking show. Chef hat on and start with the coconut milk, nut butter, and chocolate bar in a medium saucepan and put it on the lowest heat possible. Continuously stir as the chocolate, coconut milk, and nut butter melts together. Once these melt together add in all of the other ingredients and stir together until it is thoroughly mixed.
Once everything is mixed well together, spread the mixture onto some waxed paper laid out in a baking dish. Licking the spatula and your fingers is permitted. Place it on your favorite shelf in the refrigerator to solidify and cool down. Now you have some of the healthiest chocolate fudge ever known to man!
Keep in mind that you still need to keep your serving portions small because this is still a calorie-dense snack even though it is super-healthy. The good news is that it is lower in sugar and calories than typical fudge and has loads more nutrition than any typical fudge.
